Instant Pot Rice Pudding is creamy and aromatic, flavored with cinnamon and nutmeg, ready in just 30 Minutes.
1 1/4 cups water,3/4 cup short-grain rice,1/2 cup granulated sugar,2 cans Fat Free Evaporated Skim Milk,2 cups water,1/4 cup raisins (optional),1 tsp vanilla extract,1 tbsp cinnamon
1. Bring water to a boil in a large saucepan. Add rice, stir to combine. Cover. Bring back to a boil, reduce heat and simmer for 15 minutes or until water is absorbed.
2. Add sugar, evaporated milk, water and raisins. Stir until it comes to a boil.
3. Cover, reduce heat to low simmer and cook for 1 to 1 ½ hours, or until the mixture is very creamy. Stir occasionally.
4. Remove from heat and stir in vanilla extract. Transfer to a serving bowl and sprinkle with cinnamon. Serve hot or cold.
